The most common answer is that Deiro is simply a big fan of Harry Potter! Deiro, a former microbiologist, is also regarded as one of the most forward-thinking coffee producers in Colombia. His technique involves creating his own unique fermentation cultures using various yeasts and fruits.\u003c\/p\u003e\n\u003cp class=\"\"\u003eProcessing of the ombligon coffee begins with sorting and selection of ripened cherries. The overripe cherries are then floated out using water beds. After being sorted, the cherries undergo a 36-hour oxidation. They are then depulped and placed inside sealed containers along with a watermelon substrate (made of 3 day fermented watermelon pulp with yeast) and Saccharaomyces Cerevisiae yeast. This yeast is popular in various industries such as winemaking and baking. The cherries are fermented in this solution for 48 hours or until they reach an average pH of 3.5. Although the unique branding of Finca Lord Voldemort was the first thing to catch us by surprise, the cup qualities of Deiro Garcia’s yeast-inoculated, watermelon fermented ombligon were just as exciting. Unlike our two previous exploratory offerings, this ombligon is a very traditional cofermented coffee and we have roasted it to accentuate its unique flavor profile. This coffee exhibits in-your-face melon flavors that remind us of melona bars and Japanese crown melon, while being balanced out by subtle notes of cucumber and mint. In smaller milk drinks, the flavor and body is reminiscent of melted melon ice cream. While most coffees from this province are from a mixture of smallholder farmers, Central Sumatera Coffee (CSC) operates its own 100-hectare farm and processing plant. This means they have complete control over the farming, picking, and processing of each coffee.\u003c\/span\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan\u003eMost coffee from Sumatra is wet-hulled, but for this lot, CSC has decided to also add yeast inoculation and co-fermentation as extra processing steps. First, post-harvest, cherries are held for 16 hours inside nylon bags to allow them to soften. Then, the cherries are de-pulped and moved to fermentation tanks where yeast cultures and powdered jasmine flowers are added. After this, the coffee is patio-dried until it reaches a moisture level of 35%. Next, the cherries are wet-hulled and then the coffee is dried until it reaches a moisture level of 11-12%. The cherries are then placed in sealed tanks for 36 hours to initiate controlled oxidation. After this stage, the coffee is dry pulped, and the parchment with mucilage undergoes a second 36-hour fermentation in plastic tanks. During this phase, leachate (coffee must) from a previous batch is introduced to enhance microbial activity. Accelerated fermentation takes place during the first 12 hours, using a mother culture of microorganisms combined with panela and molasses, creating stable conditions for fermentation. The mother culture is then reintroduced, this time blended with guanabana and applied in two stages over an additional 36-hour fermentation. This step allows the beans to absorb a round, lactic fruit character while maintaining clarity in the cup.
