It was on this farm that most of the renowned Herrera family was born and trained in the ways of growing high quality coffee. Through a meticulous floating process, we gently separate the cherries, guaranteeing superior quality. Next, we measure their natural sweetness with precision, setting the stage for fermentation magic. For 72 hours, these cherries are lovingly fermented in open tanks, unlocking the vibrant, complex notes that will define your coffee experience. Our cherries are dried to perfection using advanced mechanical driers, ensuring consistent flavor development over 8 to 12 days at a controlled 38 degrees celsius.
