Wilton is known for being a pioneer in developing new and innovative coffee processing methods. Typically, his coffee undergoes multiple stages of carefully controlled processing and yeast-inoculation to bring out unique flavor profiles. However, this washed gesha from Wilton was created using simple, traditional techniques. The cherries are first de-pulped, then left to ferment in open air for 36 hours and finally, they are dried.
