This Sidra is a unique take on Pepe Jijon’s trademark “wave” philosophy and process. It uses gentle fermentation and controlled temperatures to introduce the least strain on the coffee cherries while still producing high clarity, vibrant coffee.\u003c\/span\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan\u003e\u003cbr\u003e\u003c\/span\u003e\u003cspan\u003eFor the Wave Hybrid process, the coffee cherries are first stored for 4 days in tanks at Finca Soledad’s cold room. Then they are dried for 12 days as a natural coffee. After this, the cherries are rehydrated with a small amount of water and depulped.
