A pre-fermentation is carried out using yeasts and orange for approximately 48 hours. After this stage, we inoculate the mixture into the pulped coffee mass at a temperature of 40 °C and allow it to ferment for 40 hours in 200-liter plastic tanks. The elevated temperature helps expand the coffee’s pores, allowing the flavors produced during fermentation and the orange pre-fermentation to bind more effectively to the beans.
