Nestled between two imposing mountain ranges and surrounded by rich biodiversity, this unique environment enhances every harvest. The farm is home to guadua bamboo and fruit trees that contribute to the ecosystem and accompany the daily work of the pickers. First, after cherries are sorted and disinfected, they are fermented for 24 hours in plastic tanks. Then, they are depulped and fermented a second time for 48 hours. After the second fermentation, they are submerged in a solution composed of yeasts and a pre-fermented fruit mixture.
